Chicken and Basil Pizza

This tasty appetizer will keep your guests satisfied until that main dish is done grilling!

Ingredients

1 quantity pizza dough
8 plum (egg or Italian) tomatoes, thickly sliced
2 boneless chicken breast fillets, cut into thick slices
2 tablespoons olive oil freshly ground black pepper
75 g/21/2 oz marinated olives, pitted
1/2 bunch fresh basil, shredded
25 g/4 oz grated Parmesan cheese

Directions

  1. Preheat barbecue to a high heat. Lightly brush tomato and chicken slices with oil and season with black pepper to taste. Place on barbecue and cook for 2 minutes each side or until chicken is brown and cooked through.
  2. Divide pizza dough into 8 portions and roll into rounds about 1 cm/1/2 in thick. Lightly brush dough with oil, place on barbecue grill and cook for 3-4 minutes or until golden and crisp on one side.
  3. Flip pizza bases. Top cooked side with tomatoes and chicken, then scatter with olives and basil and sprinkle with Parmesan cheese. Cook for 3-5 minutes longer or until base is golden and crisp and topping warm. Serve immediately.

Apple Cranberry Pork Chops

Abundance of sweet fall apples? To the grill!

Ingredients

6 pork chops
3/4 cup (175 mL) honey
1/4 cup (50 mL) soy sauce
1 clove garlic, chopped
pinch black pepper
2 cups (500 mL) cranberries
4 apples, cored, halved
1 orange peel, washed thoroughly
2 tbsp (30 mL) brown sugar
2 tbsp (30 mL) honey
1/4 (50 mL) cup sugar

Directions

  1. Set pork chops in a shallow, covered dish. Mix 3/4 cup of honey with 1/4 soy sauce, garlic and black pepper and pour over pork chops. Close and allow to marinate in refrigerator for 2 hours.
  2. Pre-heat gas grill to medium-high heat. Core and halve apples.
  3. In a blender or food processor, mix cranberries, orange peel and honey until lumpy.
  4. Roast apples on grill for 2 minutes per side. Cut into cubes and mix with cranberry sauce in a pan. Cook on a side-burner or range at low heat, gradually stirring in sugar. Let simmer 15 minutes.
  5. Grill pork chops on medium-high heat, basting with the lighter portion of apple cranberry sauce, about 5 minutes per side.
  6. Serve pork chops over apple-cranberry sauce with rice pilaf or other grain side.

Grilled Pineapple Topped with Ice Cream & Rum

Cool off this summer with an ice cream treat!

Ingredients

1/2 cup (100 g) sugar
1/4 teaspoon (0.6 g) ground cinnamon
4 thick slices fresh pineapple
2 tablespoons (28 g) butter, melted
1 pint (288 g) vanilla or rum raisin ice cream
3–4 tablespoons (45–60 ml) rum (gold, dark, or spiced)

Directions

  1. Preheat grill to medium.
  2. In flat dish, stir together sugar and cinnamon. Brush pineapple with melted butter and then dip into sugar mixture, coating both sides. Shake off excess.
  3. Place on grate over heat and cook until brown and sizzling, 5 to 8 minutes per side.
  4. Serve at once, topped with ice cream and drizzled with 2 to 3 teaspoons (10 to 15 ml) of rum per serving.
